Waldorf Astoria Sydney is set to open in the third quarter of 2027, according to Hilton's roundup of October 29, 2026. Hilton's July 2026 release said only that it would open in 2027. It will be the brand's first hotel in Australia, at One Circular Quay, with views of the Sydney Opera House, the Sydney Harbour Bridge and the harbour. Fiveight owns and is developing it.
Chef Curtis Stone, born in Melbourne, will lead the culinary vision for the hotel's dining, which Hilton describes as two original experiences created exclusively for the hotel. They are due to open in 2027 and mark his first restaurant project in Australia.
